Spice Rubbed Skirt Steak Topped with Peppers & Onions

This is just, hands down, one of Scott's favorite pieces of meat, and is therefore a periodic "must-have" on the menu! The kids love it, too. Tonight, I wanted to give it a south-of- the- border flair!

Rub ingredients:
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp ground pepper
1/4 tsp chili powder
pinch of sea salt

Combine all dry ingredients and rub on about 1 lb. skirt steak (trim fat from skirt steak as much as possible). Let sit for about 15 minutes, before grilling.
Sauté 3 cloves garlic, 1 red bell pepper (sliced thin), and 1/2 sliced yellow onion in 1 tsp olive oil. When steak is done, top it with sauteed pepper mixture! Serving size=3 oz.
I served this with steamed zucchini and a side salad for a 3 block Paleo/zone meal!

  1. can you have mayo on paleo-regular store bought or do you have to make your own? My whole foods mayo is canola oil, eggs, vinegar, salt-can i eat that?

  2. Hi Brian! I guess "technically" that mayonnaise is not paleo because of the salt and vinegar... BUT that's really excellent for store bought!!! Use your judgement. We use mayonnaise as an occasional condiment and in such small amounts anyway! :)
    I do have a recipe for paleo mayo if you're interested!
    Mayonnaise:
    1 egg, 1 T lemon juice, 1/4 dry mustard, 1/2 C olive oil 1/2 C flaxseed oil...blend egg, lemon juice and mustard in blender. Slowly add oils until mayo is thick. Store in sealed container for up to 7 days. (makes 1 C)
