Chicken Quesadilla

If you have leftover chicken this is a good quick meal to throw together for lunch or dinner.
Chicken Quesadilla- 3 blocks
1 whole wheat carb balance tortilla (1 block carb)
1/2 red bell pepper sliced (1/4 block carb)
1/2 green bell pepper sliced (1/4 block carb)
1/4 cup black beans (1 block carbs)
2 oz cooked chicken sliced into strips (2 blocks protein)
1 oz cheddar cheese shredded (1 block protein/ 3 blocks fat)

    Sorry I have been silent. I have been down in the dumps about my injuries, and it has made me a bit unsociable. Good news is that my back is doing GREAT, but now the shoulder is out -- a ligament issue -- and it is even more debilitating than the back if you can believe it. Michelle -- I felt fine after the workout on Saturday (burpees, cleans), but yesterday, I jumped rope for 15 minutes and afterwards it felt like someone had beat the whole inside of my shoulder with a sledge hammer. Anyway, enough complaining -- it's just more that I have to work around, and it is not fun.

    Had a great workout with Tara tonight though. They were doing bench press/cleans, which of course I did not do, so she wrote me a little cookie: 200 m run, 20 sit-ups, 20 back ext, 20 lunges, three rounds. It was great, and I went to Armadillo Willy's for a fantastic TRI-TIP SANDWICH afterwards. It was, like my Betty Burger, surprisingly zone, and I did not eat the cole slaw side. I also had a pretty perfect day -- 2 block salad, and apple, and 4 oz. Italian canned tuna for lunch. If you haven't had the Italian canned tuna from Trader Joe's, you must try it. It is so much better than the American variety -- the only deal is that it is packed in oil, so you really have to drain it hard.

    Dave, great job on your eating. I inspired you to start but now you're the one that is inspiring me to continue. Keep it up!
