I used leftover flank steak for this but choose your protein of liking. Saute the flank steak in 1 TB of teriyaki sauce until well coated. Remove steak from pan and set aside. Add 1 red bell pepper sliced, 1 1/2 cups green beans, 1 1/2 cups zucchini sliced, 1/2 cup sliced carrots, 1 cup sliced celery into the pan and cook over medium-low heat for about 5-7 minutes. Add steak back into mixture and serve immediately. Sprinkle with almonds or pecans for fat. Makes two servings. Post thoughts to comments.

ReplyDeleteThat is very funny! I at least hope the snap you tripped over was a triple ginger from TJs! I, on the other hand, just went on a nasty little sugar binge when I stumbled upon a plate of homemade holiday cookies. Sigh. The holidays are bad when you work in an office. Luckily this is my last day at work until after they are over.
On the plus side, I was down 10 pounds this morning from when I started one month ago. Wow! It's the booze, I tell you. Um, yeah, that and the chocolate and ice cream, etc., etc.

ReplyDeleteI'm still zoning in CT. I made some great Paleo cookies tonight. Basically, honey, nuts and dried fruit. They were delicious. I hope you all have a great holiday. I'm visiting CA for xmas and am looking forward to visiting a couple of crossfit affiliates while on vacation. Someday I'll make it to Santa Cruz to say hi to Michele, Jon and the CFSCC posters. I am enjoying my Cheat night and will pay dearly with tomorrow's WOD.
