Crock-Pot Paleo Pot Roast

Well, school's back in session and evenings are getting busy again. Time to dust off that crock-pot and keep it handy! Tonight we enjoyed one of my favorite, EASY crock-pot fixes! Not a lot of cooking talent, but a lot of flavor (and yields great left-overs)!

Ingredients:
Cross Rib Roast, boneless, 3-4 lbs
4-5 cloves garlic, peeled whole
1 large yellow onion, sliced
3 stalks celery, chopped
1 large sweet potato, peeled and cut in chunks
1/2 C water

Place pot roast in crock pot and cover with water. Surround roast with garlic cloves, onions and celery. Set the crock pot on low for about 6-8 hours! When I got home I added the sweet potatoes, (a little more water), and turned the crock pot up to high... I cooked just until sweet potatoes were tender (about 20 minutes). Serve with a side salad and enjoy! Easy & delish! There is nothing like walking into your house after a long day and smelling dinner... ready and waiting for you! :-)

  1. now the weather is changing, it is definitely time to get the crock pot out. This looks like a great simple recipe. Why is it Paleo though?

  2. Hi Angie! Thanks for posting. Are you referring to the sweet potatoes in the recipe? I guess technically they are not considered Paleo because they are a tuber, but for the Paleo athlete, they are a great dense carb that packs a lot of extra nutrition! :-)

  3. How much water are you putting in with the roast initially?

  4. Melissa, I only used 1/2 C initially. I left mine on closer to 8 hours (a little on the lengthy side) and needed a little extra water for the sweet potatoes. :-)
