OK, I was actually going to post this question tonight, and by coincidence, there appeared the zucchini. I also have it COMING OUT OF MY EARS, so the question is, is there such a thing as too much zucchini? I mean, can you actually do harm to yourself by eating too much of it. For example, does it (and squash in general) contain anything that you should not eat too much of? (I have heard this about things like carrots -- Vitamin A? -- and other stuff.)
I ask because I have had HUGE bowls of zucchini and yellow squash now for THREE DAYS IN A ROW. I do love it, but am wondering if maybe I should back off. What do you think?
I say, "enjoy zucchini season", Jon!!! As far as I know, zucchini on a daily basis should be perfectly fine! They have a high water content and are low in calories. They are a good source of folate, vitamin C, vitamin A, and potassium! But you would have to eat a TON for them to have any adverse or toxic affect! If you come up with some good and creative recipe ideas ... let me know!! :)
Kelly, you should include a ruler in the photo of your zuke.
Zucchini season is awesome.
