Mustard-Agave Chicken Breasts


This recipe was adapted from one of those free magazines you get at the grocery store! I changed it up a little for Paleo purposes, but WOW it was good!

Ingredients:
4 skinless, boneless, chicken breasts (pounded and cut in half)
1 T olive oil
Garlic powder, black pepper, and sea salt (optional)
1/4 C chicken broth, low sodium
3 T agave nectar
1/4 C dijon mustard
2 heads broccoli crowns, cut up
1 small yellow onion, cut in half moons

Sprinkle garlic powder, pepper and sea salt over chicken breasts and brown in olive oil, about 3 minutes on each side, then place in baking dish. Deglaze pan with chicken broth. Whisk together mustard and agave, and add pan juices! Mix well and pour over chicken breasts. Top chicken with broccoli and onions, cover with foil and bake for about 35 minutes at 350 degrees. I loved the idea of cooking the broccoli with the baking chicken! It worked great!

I do have a question though, what do you normally eat post work out now that you’re eating Paleo?

Post workout Is a good time to get some carbs in! A hearty snack of fruit, nuts, and maybe some jerky or hard boiled egg?? If I'm on the run after a workout, I tend to grab a Larabar! (totally paleo and full of simple ingredients like dried fruit and nuts).

Just found your blog while searching for paleo/zone recipes for my husband. We made this a couple nights ago and I was skeptical because I was afraid it would be too sweet, but it ended up being great!

And the leftover chicken was perfect to chop up and put on a salad for lunch the next day!
