I put the drumsticks in a teriyaki marinade for about 2 hours before grilling them. There is not a lot of meat on drumsticks so you can generally have a couple, however, I added hard boiled eggs to the salad to bring the protein up that way.
Grilled Chicken- 3 blocks
1 drumstick- (1 1/2 blocks protein)
1 cup stir fried veggies (broccoli, cauliflower and red bell peppers)(1/2 block carbs)
2 cups mixed green salad with egg, kidney beans, goat cheese, and 3 crushed croutons (2 1/2 blocks carbs/ 3 blocks fat/ 1/2 block protein)

Hello! Kelly, I made the thai style broccoli slaw tonite for dinner and realized in that recipe I posted a few weeks ago, I left out the flavor! Try it again but add to the broccoli slaw 1/2-1 tsp of each minced garlic and ginger and 1 tsp of lemongrass. (I got this at Safeway in a squeeze tube)
Tonite I wrapped part of it up in an Ezekiel tortilla or you could use the popular carb cutting torts. Was so filling!

I have been making the bag of broccoli slaw, sauteing it in a pan with 1 can of water chestnuts ( TJ's) (total 2 C blks) 1 Tb of soy sauce, 1 Tb rice vinegar and 1 Tb of Almond butter (3 fat blks) (or peanut butter). Then in another pan cook up 4 oz of shrimp (3 P blks) on med heat (I am in love with the Argentinian frozen shrimp from TJ's. If you like lobster they taste like it. really. just don't over cook) Then add the shrimp to the mix to finish cooking stir it up and serve! Makes a 3 block meal after I enjoy a block of apple sauce for desert. Sort of a thai shrimp version.
Wow, lemongrass! I will definitely try that! It was yummy before... but this sounds great!
