Paleo Blueberry Coconut Muffins

Staying at home on stormy days makes me want to bake! But leading this Paleo lifestyle doesn't always make it that easy! But today, I think I found something that works! MUFFINS! They were simple, too! And... they got the "family" approval (which means the kids liked them)... that's HUGE. Plus... It opens up a few doors for future baking strategies! First attempt was a success (I think)! Hope you give it a try! Let me know what YOU think.

1/2 C organic coconut flour
1/4 tsp. baking soda
1/2 tsp. cream of tarter
1/4 C walnut oil or coconut oil
1/4 C agave nectar
6 eggs
1/2 tsp. pure vanilla extract
1/2 tsp. sea salt (optional)
1 C fresh or frozen blueberries

Blend together oil, eggs, agave, and vanilla. Combine flour, baking soda, cream of tarter and salt, and mix together well, until there are no lumps. Fold in blueberries. Spay muffin tins and/or muffin tin liners with spray oil (to prevent sticking). Fill muffins tins about 3/4 full.
Bake in a 400 degree oven for 17-19 minutes. This easily made 12 muffins.
Zone info per muffin is roughly: 3F, .5P, 2C

you have outdone yourself. these look SO good. did the house smell good when they were baking? did they really taste like pancakes?! thanks for this recipe!!!

Yes, the house smelled great! And, according to Grayson, they tasted like "blueberry pancakes"!!! Molly, asked with a surprised expression, "these are paleo?"
Kid approval is the best!
Coconut flour is amazing, I can't wait to try more baking! :-)

Super good! It was a nice treat in the middle of our first two weeks on the paleo diet. They passed the test with our kids too! The only problem I had was with the frozen blueberries... They made the bottoms of the muffins a little soggy.

Note on the blueberries - toss them with a scant 1/4 c flour (any type) just to dust them before folding into the batter and they won't sink to the bottom and make the muffins soggy :)

can we use lemons in place of the tartar? i don't have any right now. hehe. i read that it works but i'm kind of scared to try it. ;)

p.s. the coconut flour didn't get really hard? i asked steve p. about using it with his paleo cookies instead of almond flour and he said they might turn in to hockey pucks.

The coconut flour is sooooo great! Very moist!
haha-NO hockey pucks with these muffins, I promise!

Thanks for the recipe! I used honey instead of agave. I also used frozen blueberries. The muffins were moist and yummy! My kids loved them too! They didn't come out soggy. I used coconut oil to grease a non stick mini muffin pan.

Love the look of the recipe. Does anyone have any suggestions to use Stevia instead of Agave? In relation to the amount and do I need to add more liquid or is the agave for sweetening and nothing else? Cheers

I'm on SCD and I've loved this recipe with honey. But now I can't have honey either and my only sweetner is saccharin (Sweet N Low). Please oh please help me adapt this recipe for using sweet n low! Is it possible? (I also sub the cream of tarter for 1 and a half tsp lemon juice). Thanks!
