Last day of vacation... I simply had to give these a try! I still had a little leftover pumpkin from our Christmas pumpkin pie, and I thought using it for pancakes might be tasty. I used my same nut butter recipe - substituting the applesauce or banana portion for the pumpkin puree! I did add a couple tablespoons of honey to compensate for some loss of sweetness. They turned out yummy! ...So if you ever find yourself stuck with a little leftover pumpkin puree... this is a great solution! "Pumpkin Paleo Pecan Pancakes!" - (try saying that 3 times together). Hope you enjoy!
1/2 C pumpkin puree, organic, unsweetened
1/2 C almond butter
1/4 C chopped pecans, toasted
2 T honey
1 T vanilla
1 tsp. cinnamon
1/4 tsp. fresh ground nutmeg
Preheat a nonstick griddle to 400 degrees. Combine all ingredients and mix well. Pour onto hot griddle (desired pancake size). Let them cook for about 2-3 minutes (you'll see the pancakes start to bubble and cook on the edges when they're ready to flip). Flip and cook a couple more minutes. Top with your favorite all-fruit preserve or enjoy them just the way they are! This recipe makes about 4, 4-inch pancakes! A nice finale to a wonderful holiday! Happy New Year!!!
I make Pumpkin Pancakes but I used roasted butternut squash slices as well as pureed pumpkin and then just egg whites, cinnamon & stevia! Delish!! :)

I actually tried saying Pumpkin Paleo Pecan Pancakes a few times in a row. Needless to say, I didn't get to far. Plus, my wife gave me a "are you done yet...?" look. lol This looks delish! Gonna have to gather up the ingredients and try it soon!
I can't wait to try these. I may make them on a camping trip in the future :)
Love this idea. I make a primal "man chili" and use 1/2 a can of pumpkin in it and always have the other half floating around.
Just tried these, taste is lovely, but in order to cook the inside, the outside got burnt. I think it maybe because I used 1 tsp of vanilla, because even though your recipe said 1 T I thought that seemed like a lot, although it would have thinned them out which may have helped. Will try again tomorrow.
