Italian-Style Sea Scallops with Spaghetti Squash


What a great Monday WOD... deserves a great Monday dinner! This was super tasty and really not difficult at all! I got the scallops at Costco. Such a great bargain! There are many methods for cooking spaghetti squash... the oven is my personal preference. Hope you enjoy!

About 20 bay sea scallops
1 yellow onion, chopped
3 cloves garlic, chopped
1 can, 15 oz, stewed sliced tomatoes (preferably organic, no added salt)
1/2 C + fresh basil, chopped
1 T olive oil
1/2 tsp. sea salt (always optional)
1/2 tsp. fresh ground black pepper
1 tsp. Italian seasoning
Splash (or about 1/4 C) red wine
1 spaghetti squash

Heat oven to 350 degrees. Pierce several holes in spaghetti squash and place in oven for 45 minutes. While squash is cooking, heat olive oil... sprinkle scallops with salt and pepper, and saute until golden brown. Set aside. Deglaze pan with splash of red wine. Add onions and saute until tender. Add tomatoes and Italian seasoning. When flavors are heated through and well blended, add scallops and basil. Simmer until ready to server.
Remove spaghetti squash from oven. Slice in half and remove seeds. Then just spoon out of shell onto your plate. *careful... it's hot!* Spoon scallop tomato mixture over spaghetti squash. Serve and enjoy!

Shrimp Stir Fry


This was a fun and delicious meal! My daughter and I knew we wanted a shrimp stir fry for dinner, but we couldn't agree on the vegetables. So, we took a trip to New Leaf Market and compromised our choices. We ended up having so much fun looking at their selections, a lot of which neither one of us had ever tried. This turned out to be an educational approach to "healthy eating negotiations"! Not to mention, it was an excellent stir fry! I highly recommend a tour through your local vegetable isle or farmer's market with your kids! Having them pick things out themselves is magical. Hope you enjoy our collective creation! :-)


Recipe:
about 14 raw shrimp, peeled and deveined
1 small carrot, grated (Molly insisted on grated carrots!)
1 bunch bok choy, sliced (both agreed)
1 large handful (about a cup) shiitake mushrooms (Molly wanted to try)
2 purple beauty bell peppers, julienned (we both wanted to try!)
1 to 1 1/2 T coconut oil
2 T coconut aminos (soy sauce substitute)

Heat oil in skillet, add shrimp and saute about 3-5 minutes, until shrimp is cooked through and no longer pink. Remove from pan. Add a little more coconut oil to pan if needed and saute the vegetables. I added the shiitake mushrooms last. Saute until veggies are cook through, but tender. Stir in the coconut aminos. Add the shrimp back to the pan, and toss well.
Serve and enjoy! Simple, fresh organic, paleo, kid approved and delish!

Quick Sauteed Scallops & Kale Dinner

This was a quick and easy Paleo meal. Today's CrossFit WOD totally wiped me out, and all I've been thinking about since my 10 am class, was ... BED! I scoured the cupboards and refrigerator and came up with this easy (ingredients on hand) meal. Not too shabby. It has the potential to be great. But tonight, I just needed good. This fit the bill perfectly.

Ingredients:
1 bunch kale, pulled from stem and torn in large pieces
1/2 yellow pepper
garlic, 2 cloves, minced
Shallots, diced (about 1/4 C)
1/4 C white wine
1 T lemon juice
1/2 lb. scallops (about 14 large)
2 T olive oil, divided
black pepper and sea salt (optional)

Heat 1 T olive oil in pan. Sprinkle salt and pepper over scallops. Saute scallops for about 5 minutes, until no longer raw looking. Remove, and set aside. In the same pan, add some more olive oil and saute shallots until they're slightly transparent. Add garlic, saute a couple minutes, and then add the yellow bell pepper... saute a few more minutes. Add wine to the pan, scraping all the flavored bits. Now add the kale and lemon juice. Cover and cook for about 5-8 minutes. When kale is done, add the scallops back to the pan and cook just a bit longer (2-3 minutes).
Garnish with a bit of fresh ground black pepper and serve! Quick - Easy - Paleo ! Enjoy !
