Thai Chicken

This chicken has a lot of flavor for very little work. I put it over broccoli slaw instead of rice noodles and added the crushed cashews for fat. It is low on carbs as is so you will need to add blocks to make it balance. Cut the chicken into thin slices to make cooking easier.
Thai Marinade: 4 scallions whites sliced thinly, 2 cloves minced garlic, 1/2 cup soy sauce, 1/4 cup rice vinegar, 2 TB brown sugar, 1 TB fresh lime juice, 1/2 tsp red pepper flakes.
Mix together marinade and use 1/2 to marinate chicken for 30 minutes. Reserve other half to drizzle over chicken and slaw.
In a large skillet heat 1 TB olive oil over med- high heat and add strips of chicken in small batches. Do not over crowd chicken. Cook through, about 4 minutes on each side, and serve over broccoli slaw.
Thai Chicken- 3 blocks
3 oz chicken strips- (3 blocks protein/ 1 block fat)
2 cups broccoli slaw- (about 1 block carb)
6 cashews crushed to top chicken (2 blocks fat)
1 whole wheat pita sliced and toasted (2 blocks carbs)

Hi fellow zonee's!I tend to throw a lot of dinners together on the fly combining quick veggies and protein. Tonite I wanted to eat a healthy-quick good for you green and salmon. Here is my quick 20 min 3 block dinner:
4.5 oz wild salmon 3 blks protein (I George Foreman grilled it)EASY!
1/2 cup mashed sweet potato's (aprox 2 carb blocks) pre cut wedges (microwaved in a covered glass dish for 10 min then mashed w a fork a dash of sea salt and lemon pepper)
Chopped Chard mix ( 1/2 pkg aprox 1 carb block) prepared w garlic and olive oil till wilted, then added in 1 jar of marinated garlic mushrooms with juice. Cover and steam till chard is tender( aprox 10 min.)add sea salt and pepper. Sounds sort of strange but turned out pretty tasty.
Greens served on the side and salmon served a top the sweet potatoes. Yummm. Btw all the ingredients were purchased at Trader Joe's.

Call me crazy for asking, but what is "broccoli slaw" and where do you get it?

NJ-
Broccoli slaw is shredded up broccoli stalks and carrots. You can have a lot of it for very little blocks and it is tasty! You can find it at most grocery stores and Trader Joe's has it in the salad section.

Nancy: The 'slaw' rocks. It kind of gives me a sick feeling saying that word, but it doesn't taste like slaw and it tastes better than broccoli. I saute mine with onion olive oil and add lemon pepper and sea salt at the end to taste! So filling so little carbs!

I love the broccoli slaw too. I use the big carb balance tortilla which is only one block with 2 cups of broccoli slaw sauteed in olive oil with salt and pepper and 2 oz of left over meat. Skirt steak is my favorite. It is only 2 blocks and very filling.
